Apple Streusel

Apple Streusel

This Apple Streusel is a great way to showcase the apple’s delicious flavor and texture.The delicate aromatic fragrance of cinnamon coated on the apples along with the crunch of streusel just provides it enough twist to make a beautiful delicacy of the day.Nuts such as almonds, walnuts, hazelnuts, pecans can also be added to the streusel topping.If you like you can make the streusel ahead and just cover and store in the refrigerator until needed. Apple_Streusel

 

Ready In: 40mins             Serves: 3-4

Ingredients

  1. 3 large apples
  2. 1⁄3 cup sugar
  3. 1 teaspoon cinnamon
  4. 1⁄4 teaspoon pure vanilla extract

 

Decoration

  1. 1⁄4 cup cold butter (4 tbls. or 1/4 cup)
  2. 1⁄2 cup flour
  3. 1⁄3 cup brown sugar
  4. 1⁄2 teaspoon cinnamon
  5. 1/3 cup almonds and walnuts(mixed)
  6. 1⁄8 teaspoon ground nutmeg (optional)

Direction

  1. Preheat oven to 350°.
  2. Grease the bottom only of a small (4 cups or so) casserole dish.
  3. Peel and core the apples, slice, and place in a bowl. Top with sugar, cinnamon, and vanilla, toss to coat. Set aside while preparing the topping.
  4. Make the streusel by cutting the cold butter into a bowl, adding flour, sugar, cinnamon, nuts, and nutmeg, if using.
  5. Rub it gently with your fingers until the streusel is a coarse, sandy/pebbly texture.
  6. Put the seasoned apples into the pan, top generously with the streusel, and bake at 350° about 30 minutes, or until the streusel is golden brown and the apple is starting to bubble up through the topping.
  7. Serve it hot with a scoop of Vanilla ice cream.

Almond and Coconut Macaroons

These Almond Coconut Macaroons have occupied a special place in my heart by not just being a fond remembrance of my mother baking it during tea time but because of its nature of being crusty from outside and yet chewy from inside and as you dig inside it the soft crust gives you the right amount of crunch to balance the chewiness of coconut.

I love baking these as the entire kitchen lingers with the aromatic fragrance of roasted coconut with butter. You can have it as it is or drizzle it with chocolate. But, one thing is for sure that you won’t be satisfied with just one!

Baking_Macaroons

INGREDIENTS

1.       2/3 cup sugar

2.       2 large egg whites

3.       1.5 cups unsweetened shredded coconut

4.       1/2 cup whole almonds

5.       1 teaspoon pure vanilla extract

DIRECTIONS

1.       Preheat oven to 350°F. Line two baking sheets with a nonstick baking mat or parchment paper. If you don’t have either of those, spray cookie sheets with nonstick cooking spray.

2.       Whisk together sugar and egg whites in a large bowl.

3.       Chop the almonds in a food processor.

4.       Add the almonds, shredded coconut, and vanilla to the egg whites and sugar mixture.

5.       Form dough into 16 two-tablespoon mounds, and drop each onto a sheet, 2 inches apart.

6.       Bake macaroons until golden brown on bottoms and edges, about 15 minutes. Let cool on sheets for 5 minutes before transferring cookies to a wire rack.
